  • 2 cups vegetable broth or water
  • 1 tablespoon vegetable oil
  • 1 cup shiitake mushrooms, sliced
  • 2 cups kale, torn into bite-sized pieces
  • 1 medium carrot, diced
  • 1 cup snap peas, trimmed
  • 3 green onions, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • 1 tablespoon sesame oil

Instructions

  1. Rinse rice under cold water until clear. Cook with broth or water in a pot; bring to boil, cover, and simmer for 15-18 minutes. Let sit covered for an additional 5 minutes.
  2. While rice cooks, slice shiitake mushrooms, dice carrot, trim snap peas, and prepare kale.
  3. In a large skillet or wok, heat oil over medium-high heat and sauté mushrooms until golden brown (about 4-5 minutes). Remove and set aside.
  4. Add kale to the skillet; sauté until bright green and crispy (2-3 minutes). Set aside with mushrooms.
  5. Add carrots and snap peas to the skillet; cook until tender-crisp (about 3-4 minutes), then add garlic for an additional minute.
  6. Combine cooked rice with vegetables in the skillet; stir in soy sauce and sesame oil. Season to taste.
  7. Cook everything together until heated through (2-3 minutes) before serving hot.
