- 1–2 cups vegetable oil
- 3 ripe avocados, diced
- 8 strips Applewood bacon, cooked until crispy
- 1 cup grape tomatoes, sliced in half
- 1/2 cup red onion, diced small
- 1–2 cups cheddar cheese, shredded
- 3 cups iceberg lettuce, cut into bite-size pieces
- 3 cups romaine lettuce, cut into bite-size pieces
- 3 cups leafy green lettuce, cut into bite-size pieces
- 1/2 cup Dijon mustard or yellow mustard
- 1/2 cup olive oil
- 1/2 cup lemon juice
- 2 tablespoons honey
- 1/2 teaspoon garlic powder
- 1/2 teaspoon black pepper
Instructions
- Set up your breading station: Combine flour and spices in one bowl, whisk buttermilk and egg in another, and place panko breadcrumbs in a third.
- Coat chicken pieces in flour, dip into the buttermilk mixture, then roll in panko breadcrumbs until fully covered.
- Heat vegetable oil in a frying pan over medium heat. Cook chicken pieces in batches for 5-7 minutes per side until golden brown.
- In a large bowl, combine diced avocados, crispy bacon, sliced tomatoes, diced red onion, shredded cheese, and mixed lettuce. Toss gently to mix.
- Whisk together mustard, olive oil, lemon juice, honey, garlic powder, and black pepper for the dressing.
