  • 3 cups cooked, shredded chicken
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 12 small flour tortillas
  • 4 tablespoons butter
  • 2 cups chicken broth
  • 1 cup sour cream
  • Diced green chilies
  • Ground cumin
  • Chili powder
  • Salt
  • Pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet over medium heat, melt butter and sauté diced onion and minced garlic until soft. Stir in shredded chicken, cumin, chili powder, salt, and pepper until combined.
  3. In a saucepan, melt butter and whisk in flour. Gradually add chicken broth while whisking continuously until thickened. Remove from heat and stir in sour cream and green chilies.
  4. Spread some sauce in a baking dish. Fill each tortilla with the chicken mixture, roll tightly, and place seam-side down in the dish. Pour remaining sauce over the top and sprinkle with cheese.
  5. Bake for about 25 minutes until bubbly and golden brown.
