  • 2 cups packed baby spinach
  • 1/3 cup sun dried tomatoes
  • 2 ounces low fat cream cheese
  • 1 cup whole milk
  • 2 1/2 cups low sodium chicken broth
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1 1/2 teaspoons Italian seasoning
  • 1/4 teaspoon red pepper flakes
  • Salt and freshly ground black pepper to taste
  • 1/2 cup diced shallots
  • 2 cloves garlic
  • 1/4 cup shredded parmesan cheese
  • 1 tablespoon chopped fresh basil

Instructions

  1. Heat olive oil in a large deep skillet over medium-high heat. Sauté bite-sized chicken pieces seasoned with salt, pepper, Italian seasoning, and garlic powder until cooked through (6-8 minutes). Remove and set aside.
  2. In the same skillet, sauté diced shallots and sun dried tomatoes with grated garlic until fragrant (about 2 minutes). Add chicken broth and bring to a boil.
  3. Stir in uncooked pasta; cook until al dente (15-20 minutes). Add spinach during the last minute of cooking.
  4. Mix in cream cheese and parmesan until melted. Return chicken to the skillet along with whole milk; stir until thickened (3-5 minutes). Adjust seasoning as necessary before serving.
