- 1 whole rotisserie chicken (shredded)
- 4 cups broccoli florets (fresh or frozen)
- 2 tbsp olive oil
- 3 cloves garlic (minced)
- 1 medium yellow onion (diced)
- 2 tbsp butter
- 1 cup heavy cream
- 1/2 cup low-sodium chicken broth
- 1 cup Parmesan cheese (grated)
- 1/2 cup mozzarella cheese (shredded)
- Italian seasoning, garlic powder, red pepper flakes
Instructions
- Cook penne pasta according to package directions in salted water. Add broccoli during the last 3 minutes of cooking.
- Reserve 1 cup of pasta water before draining the pasta and broccoli together.
- In a large skillet over medium-low heat, sauté onion in olive oil and butter for about 4-5 minutes until softened. Add garlic and cook for another 30 seconds.
- Stir in heavy cream and chicken broth; simmer gently for 2-3 minutes.
- Remove from heat; whisk in Parmesan and mozzarella cheeses until smooth. Season with Italian seasoning, garlic powder, salt, pepper, and red pepper flakes.
- Toss drained pasta and broccoli into the sauce; fold in shredded rotisserie chicken.
- Adjust the sauce's consistency with reserved pasta water until creamy.
