  • 1 sleeve Oreo cookies (cream removed)
  • 1/2 cup butter (room temperature)
  • 1/2 cup oil
  • 1 1/2 cups sugar
  • 4 eggs (room temperature)
  • 2 tablespoons vanilla extract
  • 3 cups cake flour
  • 1 teaspoon salt
  • 2 1/2 teaspoons baking powder
  • 1 1/3 cups buttermilk
  • 1 cup unsalted butter (for frosting)
  • 3 1/2 cups powdered sugar
  • 4 tablespoons whole milk
  • 23 tablespoons espresso powder (to taste)

Instructions

  1. Preheat the oven to 325°F and prepare your cake pans by greasing and flouring them.
  2. Crush separated Oreo cookie parts in a plastic bag using a rolling pin until small pieces form.
  3. In a mixing bowl, beat together the softened butter and oil until smooth, then add sugar and mix until fluffy.
  4. Gradually add eggs and vanilla, mixing well after each addition.
  5. Sift together dry ingredients; alternate adding them with buttermilk into the wet mixture until just combined. Gently fold in Oreo pieces.
  6. Divide batter among prepared pans and bake for about 30 minutes or until a toothpick comes out clean.
  7. For the frosting, cream unsalted butter with powdered sugar, milk, vanilla, and espresso powder until fluffy, then stir in crushed Oreos.
  8. Assemble the cooled cakes with layers of frosting in between and on top.
