  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 1/2 cup sour cream (room temperature)
  • 2 tablespoons milk (room temperature)
  • 1/2 cup brown sugar for streusel topping
  • 2 teaspoons ground cinnamon for streusel topping
  • 1/4 teaspoon sea salt for streusel topping
  • 1 1/2 cups powdered sugar for icing
  • 1/2 teaspoon vanilla extract for icing
  • 1/8 teaspoon sea salt for icing
  • 23 tablespoons heavy cream for icing

Instructions

  1. Preheat your oven to 400°F and line a muffin pan with liners.
  2. In a bowl, mix brown sugar, cinnamon, and salt for the streusel topping; blend in cold butter until crumbly.
  3. In another bowl, whisk together flour, sugars, baking powder, baking soda, salt, and cinnamon.
  4. In a large mixing bowl, combine melted butter, oils, sugars, vanilla extract, and eggs; stir in sour cream and milk until smooth.
  5. Gradually mix dry ingredients into wet until just combined; avoid overmixing.
  6. Fill muffin liners two-thirds full with batter and sprinkle streusel on top.
  7. Bake for about 18 minutes or until a toothpick comes out clean.
  8. Cool for five minutes in the pan before transferring to a wire rack.
