Ingredients
- 1 pound salmon fillets (or preferred fish)
- ⅓ cup olive oil
- 1 red bell pepper, sliced
- 1 serrano or jalapeno pepper, sliced
- ½ cup chopped cilantro
- 2 carrots, cut into strips
- 1 russet potato, sliced (optional)
- 6 garlic cloves, halved
- 1 tablespoon tomato paste
- sweet paprika

Instructions
- Heat olive oil in a large sauté pan over medium heat. Add all vegetables and sauté for 2–3 minutes until slightly softened.
- Stir in tomato paste and spices; cook for another 2–3 minutes.
- Add half the cilantro and around ¾ cup water. Cover and simmer for 12–15 minutes until veggies are tender.
- Season fish with salt and place into the pan to coat with sauce. Add more water if needed.
- Cover and cook on low flame for about 20–25 minutes, spooning sauce over fish halfway through cooking.
- Serve garnished with lemon slices and remaining cilantro.
