  • 1 pound salmon fillets (or preferred fish)
  • ⅓ cup olive oil
  • 1 red bell pepper, sliced
  • 1 serrano or jalapeno pepper, sliced
  • ½ cup chopped cilantro
  • 2 carrots, cut into strips
  • 1 russet potato, sliced (optional)
  • 6 garlic cloves, halved
  • 1 tablespoon tomato paste
  • sweet paprika
  • hot paprika
  • coarse salt
  • cumin
  • turmeric

Instructions

  1. Heat olive oil in a large sauté pan over medium heat. Add all vegetables and sauté for 2–3 minutes until slightly softened.
  2. Stir in tomato paste and spices; cook for another 2–3 minutes.
  3. Add half the cilantro and around ¾ cup water. Cover and simmer for 12–15 minutes until veggies are tender.
  4. Season fish with salt and place into the pan to coat with sauce. Add more water if needed.
  5. Cover and cook on low flame for about 20–25 minutes, spooning sauce over fish halfway through cooking.
  6. Serve garnished with lemon slices and remaining cilantro.
