  • 4 ribs celery (finely diced)
  • 1 green bell pepper (finely diced)
  • 1 red bell pepper (finely diced)
  • ½ cup red onion (finely diced)
  • 2 hard boiled eggs (chopped)
  • ½ cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon red wine vinegar
  • ½ teaspoon dill pickle juice (more to taste)
  • 2 teaspoons granulated white sugar
  • ½ teaspoon salt
  • ¼ teaspoon black pepper (or to taste)

Instructions

  1. Cook elbow macaroni according to package instructions until al dente. Rinse under cold water and drain.
  2. While pasta cools, finely dice celery, green bell pepper, red bell pepper, and red onion; chop hard-boiled eggs.
  3. In a large bowl, combine cooled pasta with diced veggies and eggs.
  4. In a separate bowl, whisk together mayonnaise, Dijon mustard, red wine vinegar, dill pickle juice, sugar, salt, and black pepper.
  5. Pour dressing over pasta mixture; toss gently until evenly coated.
  6. Cover with plastic wrap and refrigerate for at least one hour before serving.
