  • 3/4 cup sugar
  • 4 tbsp butter (room temperature)
  • 1 egg
  • 1/2 cup whole milk
  • 3 cups fresh or frozen blueberries
  • For Streusel: 1/2 cup sugar, 1/3 cup cake flour, 1/2 tsp cinnamon, and 4 tbsp cold butter

Instructions

  1. Preheat your oven to 375°F and grease a 9×9 baking dish.
  2. In one bowl, whisk together cake flour, baking powder, and salt.
  3. In another bowl, cream butter and sugar until fluffy. Add egg and vanilla; mix well.
  4. Alternately mix in the flour mixture with milk until just combined.
  5. Gently fold in blueberries.
  6. Spread batter in prepared dish.
  7. For the streusel topping, combine sugar, cake flour, cinnamon, and cubed butter until crumbly; sprinkle on top of batter.
  8. Bake for 35–40 minutes until a toothpick comes out clean.
  9. Allow to cool for at least 10 minutes before serving.
