- 3 overripe bananas
- 4 tbsp melted vegan butter
- 3/4 cup maple syrup
- 1 cup almond or oat milk
- 1 1/2 cups all-purpose flour (regular or gluten-free)
- 1 cup rolled oats
- Cinnamon swirl mixture (4 tbsp melted vegan butter, 1/3 cup brown sugar, 2 tbsp cinnamon)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a greased loaf pan.
- In a mixing bowl, blend mashed bananas, melted vegan butter, maple syrup, almond milk, and vanilla extract until smooth.
- In another bowl, mix baking powder, baking soda, cinnamon, salt, flour, and oats.
- Combine the dry ingredients into the wet mixture until just combined.
- Prepare the cinnamon swirl by mixing melted vegan butter, brown sugar, and cinnamon in a small bowl.
- Layer half of the batter in the loaf pan followed by half of the cinnamon mixture; repeat layers.
- Swirl through with a knife for a marbled effect and bake for about 45 minutes or until a toothpick comes out clean.
- Allow cooling before serving; drizzle with optional cream cheese frosting if desired.
