  • 4 tbsp melted vegan butter
  • 3/4 cup maple syrup
  • 1 cup almond or oat milk
  • 1 1/2 cups all-purpose flour (regular or gluten-free)
  • 1 cup rolled oats
  • Cinnamon swirl mixture (4 tbsp melted vegan butter, 1/3 cup brown sugar, 2 tbsp cinnamon)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a greased loaf pan.
  2. In a mixing bowl, blend mashed bananas, melted vegan butter, maple syrup, almond milk, and vanilla extract until smooth.
  3. In another bowl, mix baking powder, baking soda, cinnamon, salt, flour, and oats.
  4. Combine the dry ingredients into the wet mixture until just combined.
  5. Prepare the cinnamon swirl by mixing melted vegan butter, brown sugar, and cinnamon in a small bowl.
  6. Layer half of the batter in the loaf pan followed by half of the cinnamon mixture; repeat layers.
  7. Swirl through with a knife for a marbled effect and bake for about 45 minutes or until a toothpick comes out clean.
  8. Allow cooling before serving; drizzle with optional cream cheese frosting if desired.
