  • 3 oz cooking oil (canola or vegetable)
  • 2 large eggs
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 1 cup pumpkin puree
  • 1 1/4 cups chocolate chips (divided)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×4 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, cloves, and nutmeg.
  3. In a large bowl, mix the oil, eggs, sugar, vanilla extract, and pumpkin puree until well combined.
  4. Gradually add the dry ingredients to the wet mixture; mix gently until just combined.
  5. Fold in one cup of chocolate chips using a rubber spatula.
  6. Pour the batter into the prepared loaf pan and sprinkle the remaining chocolate chips on top.
  7. Bake for 50–60 minutes or until a toothpick inserted comes out clean.
  8. Cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
