- 1 lb Ground Beef
- 1 medium Onion (diced)
- 14.5 oz Diced Tomatoes (canned, undrained)
- 16 oz Elbow Macaroni
- 2 cups Cheddar Cheese (shredded, divided)
- 2 Tbsp Taco Seasoning
Instructions
- Preheat your oven to 350°F (175°C).
- Boil water in a pot and cook elbow macaroni until al dente. Drain.
- In a large skillet over medium heat, cook ground beef and diced onion until beef is browned.
- Drain excess fat, then add diced tomatoes, water, and taco seasoning; simmer for 5 minutes.
- Mix cooked macaroni into the beef mixture until well combined.
- In a greased 13×9 baking dish, layer half the mixture, sprinkle with 1 cup of cheese, then add the remaining mixture on top.
