  • 2 tablespoons olive oil or 1/4 cup water/broth
  • 1 large onion, diced
  • 34 garlic cloves, minced
  • 2-inch piece of ginger, minced
  • 1 can (15oz) coconut milk
  • 2 cans (14oz) chickpeas, drained and rinsed
  • 2 cans (14oz) diced tomatoes with juices
  • 1 teaspoon cumin seeds
  • 1 tablespoon ground coriander (optional)
  • 1 1/2 teaspoons turmeric
  • 1 heaping teaspoon garam masala
  • 1/2 teaspoon cayenne
  • 1/2 teaspoon mineral salt
  • 1/2 cup chopped fresh cilantro

Instructions

  1. Heat oil or water in a large pot over medium heat. Sauté onions and cumin seeds until onions are browned.
  2. Add garlic and ginger; cook until fragrant.
  3. Stir in turmeric, garam masala, cayenne pepper, and salt; sauté until spices are aromatic.
  4. Pour in diced tomatoes and cook for about 4 minutes.
  5. Mix in chickpeas, tomato paste, and coconut milk; bring to a simmer.
  6. Cover and let simmer on low heat for 25–30 minutes, stirring occasionally.
  7. Serve hot garnished with fresh cilantro over rice or quinoa.
