Ingredients
- 2 tablespoons olive oil or 1/4 cup water/broth
- 1 large onion, diced
- 3–4 garlic cloves, minced
- 2-inch piece of ginger, minced
- 1 can (15oz) coconut milk
- 2 cans (14oz) chickpeas, drained and rinsed
- 2 cans (14oz) diced tomatoes with juices
- 1 teaspoon cumin seeds
- 1 tablespoon ground coriander (optional)
- 1 1/2 teaspoons turmeric
- 1 heaping teaspoon garam masala
- 1/2 teaspoon cayenne
- 1/2 teaspoon mineral salt
- 1/2 cup chopped fresh cilantro
Instructions
- Heat oil or water in a large pot over medium heat. Sauté onions and cumin seeds until onions are browned.
- Add garlic and ginger; cook until fragrant.
- Stir in turmeric, garam masala, cayenne pepper, and salt; sauté until spices are aromatic.
- Pour in diced tomatoes and cook for about 4 minutes.
- Mix in chickpeas, tomato paste, and coconut milk; bring to a simmer.
- Cover and let simmer on low heat for 25–30 minutes, stirring occasionally.
- Serve hot garnished with fresh cilantro over rice or quinoa.
