- 1 lb boneless skinless chicken breast
- 1 ¾ cups shredded cheddar cheese
- ¼ cup grated Parmesan cheese
- ½ lb small or medium pasta shells
- 1 ½ cups half and half
- ½ cup chicken broth
- ½ chicken bouillon cube
- 1 teaspoon hot sauce
- 1 teaspoon mustard powder
- ½ teaspoon EACH: onion powder, garlic powder, parsley
- ¼ teaspoon EACH: paprika, pepper
- 1–2 tablespoons olive oil
- 3 tablespoons butter
- 3 tablespoons flour
- Salt/pepper (to taste)
Instructions
- In a large measuring cup, combine sauce ingredients (half and half, chicken broth, bouillon cube, hot sauce, mustard powder, onion powder, garlic powder, parsley, paprika, pepper) and set aside.
- Boil salted water for pasta; cook according to package instructions until al dente.
- Slice chicken thinly and pound to ½ inch thick; season with salt and pepper.
- Sear chicken in olive oil over medium-high heat until golden brown; set aside.
- Deglaze skillet with white wine; reduce by half.
- Make roux by melting butter and stirring in flour; cook briefly.
- Gradually stir in sauce mixture until thickened; lower heat and add cheeses until melted.
