  • 8 oz uncooked noodles (spaghetti, fettuccine, or gluten-free)
  • 1 pound boneless skinless chicken breast (cut into bite-sized pieces)
  • 1 cup julienned carrots
  • 1 ½ cup red and yellow bell peppers (sliced)
  • 2 cups sliced mushrooms
  • ½ cup chopped green onions
  • 1 ½ tablespoon dark soy sauce
  • 1 ½ tablespoon low sodium soy sauce
  • 3 tablespoons oyster sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon honey
  • 1 teaspoon ginger (grated)
  • 2 teaspoon chili flakes (optional)
  • 2 tablespoons olive oil or avocado oil
  • ½ cup chicken broth (or vegetable broth)
  • 12 tablespoon toasted optional sesame seeds
  • 1 ½ teaspoon tapioca flour (or cornstarch)
  • salt & pepper to taste
  • 5 teaspoon freshly minced garlic

Instructions

  1. Cook the noodles according to package instructions until al dente. Drain and set aside.
  2. In a bowl, mix all sauce ingredients and set aside.
  3. Marinate chicken in half of the sauce for at least an hour.
  4. Heat oil in a large skillet over high heat; cook chicken until golden brown (about 3-4 minutes per side).
  5. Stir-fry mushrooms for 3-4 minutes; add bell peppers, carrots, garlic, and sauté for another 2 minutes.
  6. Pour remaining sauce into the skillet; add cooked chicken and noodles. Toss until well combined.
  7. Garnish with green onions and sesame seeds before serving.
