Ingredients
- 8 oz uncooked noodles (spaghetti, fettuccine, or gluten-free)
- 1 pound boneless skinless chicken breast (cut into bite-sized pieces)
- 1 cup julienned carrots
- 1 ½ cup red and yellow bell peppers (sliced)
- 2 cups sliced mushrooms
- ½ cup chopped green onions
- 1 ½ tablespoon dark soy sauce
- 1 ½ tablespoon low sodium soy sauce
- 3 tablespoons oyster sauce
- 1 teaspoon sesame oil
- 1 teaspoon honey
- 1 teaspoon ginger (grated)
- 2 teaspoon chili flakes (optional)
- 2 tablespoons olive oil or avocado oil
- ½ cup chicken broth (or vegetable broth)
- 1–2 tablespoon toasted optional sesame seeds
- 1 ½ teaspoon tapioca flour (or cornstarch)
- salt & pepper to taste
- 5 teaspoon freshly minced garlic
Instructions
- Cook the noodles according to package instructions until al dente. Drain and set aside.
- In a bowl, mix all sauce ingredients and set aside.
- Marinate chicken in half of the sauce for at least an hour.
- Heat oil in a large skillet over high heat; cook chicken until golden brown (about 3-4 minutes per side).
- Stir-fry mushrooms for 3-4 minutes; add bell peppers, carrots, garlic, and sauté for another 2 minutes.
- Pour remaining sauce into the skillet; add cooked chicken and noodles. Toss until well combined.
- Garnish with green onions and sesame seeds before serving.
