Ingredients
- 2 pounds boneless chicken (breast or thighs)
- 1 cup plain yogurt
- ½ cup cashews
- 4 cloves garlic
- 1 tablespoon minced ginger
- 1 tablespoon garam masala
- 1 teaspoon red pepper flakes
- 1 teaspoon paprika
- 1 teaspoon turmeric
- 1 teaspoon ground coriander
- ½ teaspoon ground cardamom
- ½ teaspoon cumin
- ½ teaspoon cinnamon
- 1 cup heavy cream or coconut milk
- 1 tablespoon olive oil
- 2–3 spicy chili peppers (chopped)
- 1 medium onion (chopped)
- ½ cup chicken stock
Instructions
- In a large bowl, combine chopped chicken with yogurt and marinate with blended spices and cashews for at least 1 hour.
- Heat olive oil in a pan; sauté chopped onions and chili peppers until softened.
- Add marinated chicken along with marinade and chicken stock; cook for about 15 minutes.
- Stir in heavy cream or coconut milk; simmer for an additional 10 minutes.
