  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts
  • 1 envelope (3 tablespoons) taco or fajita seasoning
  • 2 cups diced onion
  • 2 cups diced bell peppers
  • 34 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 1/2 cup heavy cream
  • 1 (10 oz) can Ro-Tel Diced Tomatoes and Green Chiles
  • 8 oz penne pasta
  • 1/2 teaspoon salt

Instructions

  1. Cut chicken into bite-sized pieces and season with half of the taco seasoning. Heat 1 tablespoon olive oil in a large skillet over high heat. Add the chicken in a single layer and cook until browned on both sides. Remove from skillet and set aside.
  2. In the same skillet, add the remaining olive oil along with onions, bell peppers, and the rest of the taco seasoning. Cook until veggies are slightly blackened; then add garlic and cook until fragrant.
  3. Pour in chicken broth, heavy cream, diced tomatoes, uncooked pasta, and salt. Stir to combine and bring to a boil. Cover and reduce heat to medium-low; cook for about 15 minutes or until pasta is tender.
  4. Add chicken and veggies back to the skillet; stir until heated through before serving.
