Ingredients
- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts
- 1 envelope (3 tablespoons) taco or fajita seasoning
- 2 cups diced onion
- 2 cups diced bell peppers
- 3–4 cloves garlic, minced
- 2 cups low-sodium chicken broth
- 1/2 cup heavy cream
- 1 (10 oz) can Ro-Tel Diced Tomatoes and Green Chiles
- 8 oz penne pasta
- 1/2 teaspoon salt
Instructions
- Cut chicken into bite-sized pieces and season with half of the taco seasoning. Heat 1 tablespoon olive oil in a large skillet over high heat. Add the chicken in a single layer and cook until browned on both sides. Remove from skillet and set aside.
- In the same skillet, add the remaining olive oil along with onions, bell peppers, and the rest of the taco seasoning. Cook until veggies are slightly blackened; then add garlic and cook until fragrant.
- Pour in chicken broth, heavy cream, diced tomatoes, uncooked pasta, and salt. Stir to combine and bring to a boil. Cover and reduce heat to medium-low; cook for about 15 minutes or until pasta is tender.
