Ingredients
- 2 tablespoons olive oil
- 1 medium yellow onion, chopped

- 3 ribs celery, chopped
- 2 cups rotisserie chicken, shredded
- 4 cups chicken stock
- 2 teaspoons salt
- 1 teaspoon pepper
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 tablespoon Italian seasoning
- 3/4 cup barley
Instructions
- Rinse and drain 3/4 cup of barley under cold water; set aside.
- In a large pot, heat 2 tablespoons of olive oil over medium heat. Add 1 chopped yellow onion and 2 minced cloves of garlic; sauté until the onion is translucent.
- Stir in seasonings (1 teaspoon each of salt and pepper, 1 teaspoon onion powder, 1 teaspoon garlic powder, and 1 tablespoon Italian seasoning) along with 3/4 cup chopped carrots, 3/4 cup chopped celery, and the prepared barley.
- Add 2 cups shredded rotisserie chicken and pour in 4 cups of chicken stock; bring to a boil.
- Reduce heat to low, cover, and simmer for about 30 minutes until barley is tender. Adjust seasoning before serving hot.
