  • 1 pound ground beef
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 2¼ cups beef broth
  • 1 (10 oz) can Rotel
  • 2 tablespoons tomato paste
  • 1½ cups long-grain white rice (dry)
  • 2 cups shredded cheese

Instructions

  1. In a large skillet over medium-high heat, heat olive oil and add ground beef and onions. Cook until beef is no longer pink and onions are translucent (8-10 minutes). Drain grease.
  2. Stir in minced garlic and taco seasoning; cook for an additional 30 seconds.
  3. Add beef broth, Rotel, and tomato paste; bring to a boil.
  4. Stir in dry rice and return to a boil.
  5. Cover and reduce heat to medium-low; simmer for about 15 minutes or until rice is tender.
  6. Sprinkle cheese over the top; cover until melted (about 5 minutes).
  7. Serve hot with your favorite toppings.
