  • 8 ounces tortellini
  • 1 pound ribeye steak, thinly sliced
  • 1 medium onion, sliced
  • 1 bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup beef broth
  • 1/2 cup heavy cream
  • 1 cup provolone cheese, shredded
  • 1/4 cup Parmesan cheese, grated
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Boil salted water in a large pot and cook tortellini according to package instructions until al dente (3-5 minutes). Drain and set aside.
  2. In a skillet, heat olive oil over medium-high heat, sauté the ribeye steak for 3-4 minutes until browned; remove and set aside.
  3. In the same skillet, cook onion and bell pepper for 5-6 minutes until softened; add garlic and cook for an additional minute.
  4. Pour in beef broth and simmer while scraping up browned bits; stir in heavy cream until sauce thickens (2-3 minutes).
  5. Add provolone cheese and Parmesan; stir until melted.
  6. Return steak to skillet; combine with drained tortellini and coat well. Heat through for another 2-3 minutes.
  7. Serve hot, garnished with fresh parsley.
