- 1 pound ribeye steak, thinly sliced
- 1 medium onion, sliced
- 1 bell pepper, sliced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup beef broth
- 1/2 cup heavy cream
- 1 cup provolone cheese, shredded
- 1/4 cup Parmesan cheese, grated
- 1 tablespoon fresh parsley, chopped
Instructions
- Boil salted water in a large pot and cook tortellini according to package instructions until al dente (3-5 minutes). Drain and set aside.
- In a skillet, heat olive oil over medium-high heat, sauté the ribeye steak for 3-4 minutes until browned; remove and set aside.
- In the same skillet, cook onion and bell pepper for 5-6 minutes until softened; add garlic and cook for an additional minute.
- Pour in beef broth and simmer while scraping up browned bits; stir in heavy cream until sauce thickens (2-3 minutes).
- Add provolone cheese and Parmesan; stir until melted.
- Return steak to skillet; combine with drained tortellini and coat well. Heat through for another 2-3 minutes.
