Ingredients
- 1 large head cauliflower
- 1 (15-oz.) can chickpeas
- 1 Tbsp curry powder
- 2 tsp paprika
- 1 tsp ground cumin
- Extra-virgin olive oil
- Fresh cilantro and parsley
- Tahini
- Fresh lemon juice
- 2 cups cooked white basmati rice (or grain of choice)
Instructions
- Preheat your oven to 425°F.
- In a mixing bowl, combine curry powder, paprika, cumin, salt, and pepper. Toss cauliflower florets with half the spice mixture and chickpeas with the rest.
- Spread cauliflower on one baking sheet and chickpeas on another; drizzle with olive oil. Roast for 30 minutes, tossing halfway through.
- While roasting, blend cilantro, parsley, tahini, lemon juice, garlic, cumin, salt, pepper, and warm water until smooth to create the Green Tahini Sauce.
- Assemble bowls by placing cooked rice at the bottom and topping with roasted vegetables and sauce.
