  • 3 large eggs
  • ¾ cup granulated sugar
  • 2 cups shredded carrots
  • 8 oz cream cheese (cold)
  • 8 Tbsp butter (room temperature)
  • 1 cup powdered sugar

Instructions

  1. Preheat your oven to 375°F (190°C) and line a jelly roll pan with parchment paper.
  2. In a bowl, mix flour, baking powder, baking soda, salt, and spices. Set aside.
  3. In another bowl, whisk together eggs, sugar, oil, and vanilla.
  4. Combine wet and dry ingredients; fold in shredded carrots.
  5. Spread the batter evenly in the prepared pan and bake for 10–13 minutes until set.
  6. Roll the warm cake in parchment paper; let it cool for about 10 minutes.
  7. For frosting, beat cream cheese until smooth; add butter gradually, then mix in powdered sugar and vanilla.
  8. Unroll the cooled cake, spread frosting except for one end, then re-roll tightly.
  9. Chill wrapped in plastic wrap for at least one hour before slicing.
