  • 1 cup shredded carrots
  • 4 ounces cream cheese (room temperature)
  • 1/4 cup granulated sugar
  • 1 large egg yolk

Instructions

  1. Preheat your oven to 350°F and prepare an 8×8 baking pan with non-stick spray or parchment paper.
  2. In a mixing bowl, blend melted butter and brown sugar, then add egg and vanilla until smooth.
  3. In another bowl, whisk flour, cinnamon, baking powder, and salt; mix into the wet ingredients followed by folding in shredded carrots.
  4. For the cheesecake layer, beat cream cheese with granulated sugar until fluffy; add egg yolk and mix until smooth.
  5. Spread half of the carrot cake batter into the pan, dollop cheesecake mixture on top, then cover with remaining batter. Swirl with a knife for a marbled effect.
