  • 6 bone-in, skin-on chicken thighs
  • 1½ cups long-grain white rice
  • 1 cup coconut milk
  • 2 tablespoons vegetable or coconut oil
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 Scotch bonnet pepper (or substitute)
  • Fresh thyme
  • Ground allspice

Instructions

  1. Season chicken thighs with salt, pepper, paprika, allspice, garlic powder, and onion powder; marinate for 15 minutes.
  2. Heat oil in a heavy-duty skillet over medium-high heat; sear chicken until golden brown on both sides. Remove chicken and set aside.
  3. Sauté onions, garlic, bell peppers until softened. Add chopped tomatoes and Scotch bonnet pepper.
  4. Stir in thyme, allspice, rice, broth, coconut milk; combine well.
  5. Nestle chicken back into the mixture; bring to a boil then reduce heat to low and cover.
  6. Simmer for 25-30 minutes until rice is cooked through.
  7. Optional: Stir in frozen peas during the last 5 minutes of cooking. Fluff rice before serving.
