Ingredients
- 6 bone-in, skin-on chicken thighs
- 1½ cups long-grain white rice
- 1 cup coconut milk
- 2 tablespoons vegetable or coconut oil
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 Scotch bonnet pepper (or substitute)
- Fresh thyme
- Ground allspice
Instructions
- Season chicken thighs with salt, pepper, paprika, allspice, garlic powder, and onion powder; marinate for 15 minutes.
- Heat oil in a heavy-duty skillet over medium-high heat; sear chicken until golden brown on both sides. Remove chicken and set aside.
- Sauté onions, garlic, bell peppers until softened. Add chopped tomatoes and Scotch bonnet pepper.
- Stir in thyme, allspice, rice, broth, coconut milk; combine well.
- Nestle chicken back into the mixture; bring to a boil then reduce heat to low and cover.
- Simmer for 25-30 minutes until rice is cooked through.
- Optional: Stir in frozen peas during the last 5 minutes of cooking. Fluff rice before serving.
