  • 2 cups cherry tomatoes
  • 1 tablespoon olive oil
  • 2 tablespoons basil pesto
  • 5 cloves garlic (minced)
  • 1 cup sour cream
  • 1/2 cup fresh chopped basil
  • 8 oz fresh mozzarella (cut into chunks)
  • 8 oz shredded provolone cheese
  • 1/4 cup grated parmesan cheese

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a baking dish, combine cherry tomatoes, olive oil, pesto, minced garlic, salt, and pepper. Toss to coat and bake for 15 minutes until blistered.
  3. While tomatoes roast, mix sour cream and chopped basil in a bowl. Add mozzarella, provolone, and parmesan; stir well.
  4. Once tomatoes are ready, add the cheesy mixture on top and gently combine. Arrange halved cherry tomatoes on top.
  5. Bake for another 20 minutes until cheese is melted and bubbly. Garnish with fresh basil before serving.
