Ingredients
- 2 cups cherry tomatoes
- 1 tablespoon olive oil
- 2 tablespoons basil pesto
- 5 cloves garlic (minced)
- 1 cup sour cream
- 1/2 cup fresh chopped basil
- 8 oz fresh mozzarella (cut into chunks)
- 8 oz shredded provolone cheese
- 1/4 cup grated parmesan cheese
Instructions
- Preheat oven to 400°F (200°C).
- In a baking dish, combine cherry tomatoes, olive oil, pesto, minced garlic, salt, and pepper. Toss to coat and bake for 15 minutes until blistered.
- While tomatoes roast, mix sour cream and chopped basil in a bowl. Add mozzarella, provolone, and parmesan; stir well.
- Once tomatoes are ready, add the cheesy mixture on top and gently combine. Arrange halved cherry tomatoes on top.
- Bake for another 20 minutes until cheese is melted and bubbly. Garnish with fresh basil before serving.
