  • 13 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • ½ tbsp butter
  • 1 large onion (diced)
  • 2 cloves garlic (minced)
  • 2 tbsp sun-dried tomatoes (chopped)
  • 1 cup orzo pasta
  • 1 cup chicken broth
  • 1 cup spinach (shredded)
  • ¼ cup heavy cream
  • 3 tbsp grated parmesan cheese

Instructions

  1. Season chicken strips with Cajun seasoning and salt. Heat olive oil and butter in a large chef's pan over medium heat. Cook chicken until browned.
  2. Add onion, garlic, sun-dried tomatoes, and tomato paste; sauté for about five minutes.
  3. Stir in orzo pasta and cook for one minute before adding chicken broth. Cover and simmer for about 20 minutes, stirring frequently.
  4. Check orzo tenderness; stir in spinach until wilted.
  5. Mix in heavy cream and parmesan cheese until well combined. Taste and adjust seasoning before serving.
