  • 8 ounces uncooked fettuccine
  • 2 chicken breasts (cut into 1-inch pieces)
  • ½ pound shrimp (31/40 size, thawed & peeled)
  • 1 cup heavy cream
  • 4 ounces cream cheese
  • 1 cup freshly grated parmesan cheese
  • 2 tablespoons olive oil
  • Garlic powder
  • Cajun seasoning

Instructions

  1. Soften cream cheese before starting.
  2. Boil salted water and cook fettuccine until al dente.
  3. Thaw shrimp under cool water, peel, and pat dry; season chicken and shrimp with garlic powder and Cajun seasoning.
  4. In a deep skillet, heat olive oil over medium-high heat; cook shrimp for about 3 minutes, then remove.
  5. Add chicken to the skillet, cooking until browned (5-6 minutes); transfer to the plate with shrimp.
  6. Make the sauce: stir butter, heavy cream, cream cheese, garlic, and remaining Cajun seasoning in the skillet until smooth.
  7. Thicken sauce for 2-3 minutes; add parmesan cheese, then return chicken and shrimp to heat through.
  8. Toss cooked fettuccine with sauce; serve warm.
