  • 2 cups rotisserie chicken (finely diced)
  • 4 ounces cream cheese (softened)
  • ¼ cup buffalo sauce
  • 1 cup sharp cheddar cheese (shredded)
  • 1 cup mozzarella cheese (shredded)
  • 1 packet dry ranch seasoning mix
  • 8 egg roll wrappers
  • Cooking spray

Instructions

  1. In a mixing bowl, combine finely diced rotisserie chicken, softened cream cheese, buffalo sauce, shredded cheddar and mozzarella cheeses, and ranch seasoning. Mix until well combined.
  2. Lay an egg roll wrapper on a clean surface with one corner pointing towards you. Place about ⅓ cup of the filling in the center. Wet the edges with water.
  3. Fold up the bottom corner over the filling, then fold in both side corners toward the center. Roll tightly from bottom to top to seal.
  4. Preheat air fryer to 400°F. Place egg rolls in the basket without overcrowding and lightly spray with cooking spray. Air fry for 3-4 minutes on each side until golden brown.
