Ingredients

Scale
  • 1/2 cup unsalted butter
  • 3/4 cup whole milk or buttermilk
  • 2 and 1/4 teaspoons instant yeast
  • 3 tablespoons honey
  • 1 large egg
  • 1 teaspoon salt
  • 2 teaspoons fresh chopped sage
  • 1 teaspoon fresh thyme
  • 3 cups bread flour

Instructions

  1. Brown the Butter: Melt the butter in a light-colored skillet over medium heat until it turns golden brown with nutty aromas. Transfer to a bowl and cool for 10 minutes.
  2. Activate Yeast: In a mixing bowl, combine warmed milk, yeast, and 1 tablespoon of honey. Let sit for 5–10 minutes until foamy.
  3. Combine Ingredients: Add the remaining honey, egg, cooled brown butter (reserve some), salt, herbs, and flour. Mix until combined.
  4. Knead Dough: Knead using a stand mixer or by hand until slightly tacky and smooth.
  5. First Rise: Place dough in an oiled bowl, cover, and allow to rise for about 1.5–2 hours until doubled in size.
  6. Shape Rolls: Grease your baking pan and shape the dough into rolls before placing them in the pan for a final rise.
