Instructions

  1. Brown the butter in a saucepan over medium heat until it reaches an amber color.
  2. Chill the browned butter for about 20 minutes in the refrigerator.
  3. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  4. Whisk together dry ingredients: flour, baking soda, baking powder, salt, pumpkin pie spice, and cinnamon.
  5. In a large bowl, mix dark brown sugar with cooled butter until clumpy.
  6. Add egg yolk, maple syrup, vanilla extract, and pumpkin puree; mix until smooth.
  7. Fold in dry ingredients gently; chill if dough is too thin.
  8. Scoop dough into balls, coat in cinnamon-sugar mixture, and bake for 12–15 minutes.
