  • 68 frozen hash brown patties
  • 1 pound pork sausage
  • 1 small yellow onion (finely diced)
  • ½ red bell pepper (diced)
  • ½ green bell pepper (diced)
  • 1 ½ cups shredded cheddar cheese (divided)
  • 8 large eggs
  • 1 cup milk
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Preheat your oven to 350°F and grease a 3-quart baking dish.
  2. Arrange the frozen hash brown patties evenly in the bottom of the dish.
  3. In a large skillet over medium-high heat, brown the pork sausage, breaking it into pieces as it cooks. Add onions and cook for an additional 1-2 minutes before mixing in the diced bell peppers.
  4. Layer the cooked sausage mixture on top of the hash browns, then sprinkle half of the cheddar cheese over it.
  5. In a bowl, whisk together eggs, milk, salt, and black pepper until combined. Pour this mixture over the casserole layers.
