  • 3 uncooked 9" pie crusts
  • 1½ cups fresh blueberries
  • ½ cup powdered sugar
  • 1 Tablespoon cornstarch
  • 1 teaspoon vanilla paste
  • Juice and zest from 1 lemon
  • 1 teaspoon ground cinnamon
  • 1 egg (for egg wash)
  • Coarse sugar for sprinkling

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, combine blueberries, powdered sugar, cornstarch, vanilla paste, lemon juice and zest, and cinnamon.
  3. Roll out two pie crusts; place one on a baking sheet.
  4. Pour blueberry filling evenly into the crust.
  5. Roll out the third crust; top the pie and brush with egg wash.
  6. Sprinkle coarse sugar on top and bake for about 30 minutes until golden brown.
  7. Let cool before slicing and serve as desired.
