  • 1 cup unsalted butter (melted)
  • ½ cup granulated sugar
  • 2 cups all-purpose flour
  • 8 ounces cream cheese (softened)
  • 1 cup granulated sugar
  • 3 cups blueberries (fresh or frozen)
  • Zest and juice of 2 lemons
  • 2 large eggs

Instructions

  1. Preheat the oven to 350°F (177°C) and line an 8"x8" baking pan with foil.
  2. For the crust, mix melted butter, sugar, lemon zest, salt, and flour until just combined; press into the pan.
  3. Bake the crust for about 15 minutes or until lightly golden.
  4. For the filling, beat softened cream cheese and sugar until smooth. Add lemon zest, eggs, yogurt/sour cream, juice, salt, and flour; mix until smooth.
  5. Pour the filling over the cooled crust and sprinkle blueberries on top.
  6. Bake for an additional 45 minutes or until set in the center.
  7. Cool completely before slicing into bars.
