  • 1 (15 oz) can pumpkin puree
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil (or melted butter)
  • 8 oz cream cheese
  • 1 tablespoon vanilla extract

Instructions

  1. Preheat the oven to 375°F and line a muffin pan with paper baking cups.
  2. In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt. Set aside.
  3. In a large bowl, combine pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract. Mix until smooth.
  4. Gradually add the dry ingredients to the wet mixture; stir until just combined.
  5. For the cream cheese swirl: beat cream cheese with granulated sugar, egg yolk, and vanilla until smooth.
  6. Fill muffin cups 3/4 full with batter; top each with about a tablespoon of cream cheese mixture and swirl gently using a toothpick.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
