- 1/2 cup vegetable oil (or melted butter)
- 8 oz cream cheese
- 1 tablespoon vanilla extract
Instructions
- Preheat the oven to 375°F and line a muffin pan with paper baking cups.
- In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt. Set aside.
- In a large bowl, combine pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract. Mix until smooth.
