  • 1 (15 lb) brisket
  • 1 cup beer
  • 1/4 cup apple cider vinegar
  • 1/4 cup beef stock
  • 5 tbsp melted butter
  • 2 tbsp garlic powder
  • 2 tbsp onion powder
  • 2 tbsp paprika
  • 2 tbsp chili powder
  • 2 tbsp kosher salt
  • 2 tbsp coarse ground black pepper
  • 1 tbsp brown sugar

Instructions

  1. Preheat your Traeger grill on Smoke mode with the lid open until the fire is established (4–5 minutes).
  2. Set the grill to 225°F and preheat with the lid closed for 10 minutes.
  3. Mix rub ingredients in a bowl and generously season the brisket on all sides.
  4. Place the brisket fat side down on the grill grate and cook until it reaches an internal temperature of 160°F (3–4 hours).
  5. While cooking, prepare the baste by combining beer, vinegar, beef stock, and melted butter in a bowl.
  6. Once at 160°F, wrap the brisket in aluminum foil and pour the baste around it before returning it to the grill until it reaches an internal temperature of 204°F (another 3–4 hours).
  7. Let the brisket rest for about 15 minutes before slicing against the grain.
