- 1 (15 lb) brisket
- 1 cup beer
- 1/4 cup apple cider vinegar
- 1/4 cup beef stock
- 5 tbsp melted butter
- 2 tbsp garlic powder
- 2 tbsp onion powder
- 2 tbsp paprika
- 2 tbsp chili powder
- 2 tbsp kosher salt
- 2 tbsp coarse ground black pepper
- 1 tbsp brown sugar
Instructions
- Preheat your Traeger grill on Smoke mode with the lid open until the fire is established (4–5 minutes).
- Set the grill to 225°F and preheat with the lid closed for 10 minutes.
- Mix rub ingredients in a bowl and generously season the brisket on all sides.
- Place the brisket fat side down on the grill grate and cook until it reaches an internal temperature of 160°F (3–4 hours).
- While cooking, prepare the baste by combining beer, vinegar, beef stock, and melted butter in a bowl.
- Once at 160°F, wrap the brisket in aluminum foil and pour the baste around it before returning it to the grill until it reaches an internal temperature of 204°F (another 3–4 hours).
- Let the brisket rest for about 15 minutes before slicing against the grain.
