  • 3 tablespoons all-purpose flour
  • 5 teaspoons water
  • 1/4 cup active sourdough starter (100% hydration)
  • 1 1/3 cups + 2 tablespoons water
  • 2 teaspoons fine sea salt
  • 4 cups + 2 tablespoons bread flour

Instructions

  1. Prepare the starter mix: Combine the sourdough starter, all-purpose flour, and water in a bowl. Mix and let sit for 30 minutes.
  2. In a larger bowl, mix the prepared starter with additional active starter, water, and salt. Gradually add the bread flour until a shaggy dough forms.
  3. Knead on a floured surface for about 8-10 minutes until smooth.
  4. Place in a greased bowl, cover, and let rise for 4-6 hours until doubled in size.
  5. Deflate, shape into a round loaf, then place seam-side down in a floured proofing basket. Let rise again for 2-3 hours or overnight in the fridge.
  6. Preheat oven to 450°F (230°C) with a Dutch oven inside.
  7. Transfer dough to hot Dutch oven (score if desired), cover, and bake for 30 minutes. Uncover and bake an additional 15-20 minutes until golden brown.
