  • 2 pounds cubed beef chuck
  • 1 medium onion, chopped
  • 3 sticks celery, chopped
  • 6 cloves garlic, minced
  • 1 (6 ounce) can tomato paste
  • 1 cup dry red wine
  • 3 cups beef broth
  • 1 pound Yukon Gold potatoes, diced
  • 4 medium carrots, sliced
  • Salt and pepper to taste

Instructions

  1. Prep all ingredients by chopping vegetables right before cooking.
  2. Dredge beef cubes in flour and shake off excess.
  3. In a Dutch oven, heat olive oil over medium-high heat and sear beef until browned in batches.
  4. Sauté onions and celery until softened; add garlic and tomato paste, cooking until fragrant.
  5. Pour in red wine and beef broth. Scrape the bottom of the pot to lift brown bits.
  6. Return seared beef to the pot along with Italian seasoning and bay leaves; bring to a boil.
  7. Reduce heat, cover, and simmer for one hour.
  8. Stir in potatoes and carrots; cover again and simmer for another hour until tender.
  9. Remove bay leaves; adjust seasoning before serving hot.
