  • 23 lbs boneless skinless chicken thighs or breasts
  • 1 cup barbecue sauce (divided)
  • 1/2 cup chicken broth
  • 2 tbsp brown sugar
  • 1 tbsp apple cider vinegar
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder
  • Salt and pepper (to taste)
  • 1 onion (diced)
  • 2 cloves garlic (minced)

Instructions

  1. Season the chicken with spices and let it rest for about 10 minutes.
  2. Add the chicken broth to the Instant Pot and place the seasoned chicken on top.
  3. Layer with half of the barbecue sauce, onion, garlic, brown sugar, and apple cider vinegar.
  4. Secure the lid and set to high pressure: 15 minutes for thighs or 12 minutes for breasts.
  5. Allow a natural pressure release for 10 minutes before performing a quick release.
  6. Shred the chicken using forks and mix in the remaining barbecue sauce. Sauté for an additional 2–3 minutes.
