  • 2 medium sweet potatoes
  • 1 large yellow onion
  • 1 medium head broccoli
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt (divided)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chipotle powder (or chili powder)
  • 1 pound boneless skinless chicken breasts
  • 1/2 cup BBQ sauce (divided)

Instructions

  1. Preheat the oven to 400°F.
  2. Peel and chop sweet potatoes into 1/2-inch chunks; chop onion into 1-inch pieces. Toss with olive oil, 1/4 teaspoon salt, garlic powder, and chipotle powder in a mixing bowl.
  3. Spread the mixture onto a lined baking sheet and bake for 20 minutes.
  4. Add broccoli to the pan after 20 minutes; push sweet potatoes aside. Place chicken breasts on the other side and brush with 1/4 cup BBQ sauce. Bake for an additional 15-20 minutes until chicken is cooked through.
  5. Shred the chicken in its juices using two forks, mix with remaining BBQ sauce, and serve in bowls with roasted vegetables.
