- 2 lb boneless, skinless chicken breasts
- 1/3 cup balsamic vinegar
- 2 Tbsp honey
- 8 oz grape tomatoes
- 8 oz fresh mozzarella balls
- 2 Tbsp avocado oil
- 2 garlic cloves, minced
- 1 tsp Italian seasoning
- 1 Tbsp Dijon mustard
- 2 Tbsp finely chopped fresh basil
- Kosher salt and fresh black pepper
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, whisk together balsamic vinegar, honey, garlic, Italian seasoning, Dijon mustard, salt, and pepper to create the sauce.
- Toss halved grape tomatoes and mozzarella balls with chopped basil in another bowl. Season lightly.
- Heat avocado oil in a large oven-safe skillet over medium-high heat. Season chicken breasts with salt and pepper.
- Sear the chicken for 1-2 minutes on each side until golden brown.
- Pour the balsamic sauce over the chicken and bring to a simmer.
- Top with the tomato-mozzarella mixture and transfer to the oven.
- Bake uncovered for 18-23 minutes until chicken reaches an internal temperature of 165°F (74°C). Let rest for 5 minutes before serving.
