  • 1 tablespoon olive oil
  • 3 teaspoons minced garlic (divided)
  • 1 teaspoon salt
  • ½ teaspoon cracked black pepper
  • 4 tablespoons butter (divided)
  • 8 ounces baby bella mushrooms (cut in half)
  • 2 cups balsamic vinegar
  • ⅓ cup brown sugar
  • 2 tablespoons honey
  • Pinch of salt

Instructions

  1. Preheat your oven to 375°F and grease a baking dish.
  2. In a bowl, toss chicken thighs with olive oil, 2 teaspoons garlic, salt, and pepper.
  3. Brown the chicken in a skillet with melted butter and honey for about 1-2 minutes on each side.
  4. Transfer the browned chicken to the baking dish.
  5. Prepare mushrooms with remaining butter and garlic; add them to the baking dish.
  6. Bake for approximately 15 minutes until the chicken is cooked through.
  7. While baking, simmer balsamic vinegar and brown sugar in a saucepan until reduced by half; stir in honey and salt.
  8. Drizzle glaze over the chicken before serving.
