Ingredients
- 2 large baking potatoes
- 200g block of feta cheese
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1 head of garlic
- Lemon (for squeezing)
- Fresh basil (for garnish)
Instructions
- Preheat your oven to 200C | 390F.
- Wash and cube the potatoes, par-boil for 6-8 minutes, then drain and let steam.
- Toss the drained potatoes with olive oil, thyme, oregano, salt, and pepper in a baking dish.
- Roast for 30-40 minutes until golden but not fully cooked.
- Add feta cheese and half a squeezed lemon; roast for another 15 minutes.
- Squeeze garlic from its skin into a bowl; mash lightly.
- Combine roasted potatoes with mashed garlic and the juice from the other half of the lemon.
- Drizzle honey over the dish and sprinkle shredded basil before serving.
