  • 2 large baking potatoes
  • 200g block of feta cheese
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 head of garlic
  • Lemon (for squeezing)
  • Fresh basil (for garnish)

Instructions

  1. Preheat your oven to 200C | 390F.
  2. Wash and cube the potatoes, par-boil for 6-8 minutes, then drain and let steam.
  3. Toss the drained potatoes with olive oil, thyme, oregano, salt, and pepper in a baking dish.
  4. Roast for 30-40 minutes until golden but not fully cooked.
  5. Add feta cheese and half a squeezed lemon; roast for another 15 minutes.
  6. Squeeze garlic from its skin into a bowl; mash lightly.
  7. Combine roasted potatoes with mashed garlic and the juice from the other half of the lemon.
  8. Drizzle honey over the dish and sprinkle shredded basil before serving.
