  • 1 red bell pepper, diced
  • 1/2 small red onion, diced
  • 3 cloves garlic, minced
  • 8 ounces feta cheese
  • 4 tablespoons olive oil
  • 1 cup baby spinach, chopped
  • 4 large eggs
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon red pepper flakes

Instructions

  1. Preheat your oven to 400 degrees F (200 degrees C).
  2. In an oven-safe dish or individual ramekins, layer the tomatoes, bell pepper, onion, garlic, and feta cheese. Drizzle with olive oil.
  3. In a small bowl, mix the oregano, sea salt, thyme, black pepper, and red pepper flakes. Sprinkle over the vegetables and feta.
  4. Bake for 25 minutes or until the veggies are tender.
  5. Stir in the chopped spinach and create wells for the eggs in the mixture.
  6. Crack an egg into each well and return to the oven for an additional 10 minutes.
