  • 2 cups cherry tomatoes
  • 2 (5.2-oz.) packages Boursin Garlic and Fine Herbs cheese
  • 12 oz. uncooked short pasta (your choice)
  • 2 cups fresh spinach
  • Grated Parmesan cheese for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a 13×9-inch baking pan, combine sun-dried tomatoes with cherry tomatoes and place Boursin cheese in the center.
  3. Bake for 20 minutes until cheese is softened and tomatoes are roasted.
  4. Meanwhile, cook pasta in salted water until al dente, then drain.
  5. Remove baking pan from the oven, stir melted cheese with tomatoes and spinach until wilted.
  6. Mix in the cooked pasta until evenly combined.
