  • ¼ cup maple syrup
  • ¼ cup coconut aminos
  • 2 cloves garlic
  • 1 medium red bell pepper
  • Boston Bibb lettuce leaves
  • 2 tsp rice vinegar
  • 1 tbsp toasted sesame oil
  • ¼½ tsp red pepper flakes (optional)
  • 2 tsp arrowroot powder (or cornstarch)
  • 1 tbsp olive oil
  • 2 tsp grated fresh ginger
  • ½ cup shredded carrots
  • 4 whole green onions (sliced into 1” pieces)
  • Kosher salt (to taste)
  • Ground pepper (to taste)

Instructions

  1. Prepare the sauce by whisking together maple syrup, coconut aminos, rice vinegar, sesame oil, and red pepper flakes (if using). Add arrowroot powder and mix until combined.
  2. Heat olive oil in a skillet over medium-high heat. Sauté ground beef until no longer pink, about 5 minutes.
  3. Stir in minced garlic and grated ginger; cook for 1-2 minutes until fragrant.
  4. Add diced bell pepper and shredded carrots; sauté until tender, about 3-4 minutes.
  5. Pour in the sauce, stir well, and simmer until slightly thickened (2-3 minutes). Adjust seasoning with salt and pepper.
  6. Fold in sliced green onions before serving.
  7. Spoon the mixture into lettuce leaves and garnish with sesame seeds.
