  • 1/4 cup unsalted butter (melted)
  • 24 ounces full-fat cream cheese (room temperature)
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream (room temperature)
  • 3 large eggs (room temperature)
  • boiling water (for the water bath)
  • salted caramel sauce

Instructions

  1. Preheat oven to 350°F (180°C).
  2. Prepare a 9-inch springform pan by wrapping it in foil and greasing it.
  3. Combine graham cracker crumbs, brown sugar, cinnamon, and melted butter; press into the bottom of the pan.
  4. Slice apples and toss with brown sugar and cinnamon; layer over the crust.
  5. Mix cream cheese, sugars, cinnamon, cornstarch, vanilla extract, sour cream, and eggs until smooth; pour over the apples.
  6. Create a water bath by placing the springform pan in a larger baking dish filled with boiling water.
  7. Bake for about 60 minutes; cool gradually in the oven before chilling overnight.
