Ingredients
- 3 medium russet potatoes
- 1–2 tablespoons olive oil
- Kosher salt to taste
- 2 tablespoons butter (softened)
- 1/4 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 cups shredded cheddar cheese (divided)
- 1 cup sour cream
- 2 slices cooked bacon (crumbled)
- Chopped green onions (for garnish)
Instructions
- Preheat air fryer to 400°F (204°C) and wash the potatoes. Coat with olive oil and sprinkle with salt. Poke holes in each potato.
- Cook potatoes in the air fryer for 30 minutes, flipping halfway through until tender.
- Allow cooling for about 10 minutes, then slice in half lengthwise and scoop out most of the flesh into a mixing bowl.
