  • Ground black pepper (to taste)
  • 14 ounces bag of coleslaw (or 3 cups shredded cabbage)
  • 1/2 small bunch cilantro (finely chopped)
  • 1/4 teaspoon salt
  • 9 corn tortillas
  • Avocado oil (for frying)
  • Easy guacamole (optional)
  • 1/2 cup plain yogurt (2%+ fat)
  • 1/4 cup mayo (preferably avocado oil mayo)
  • 1 lime (juice of)
  • 1/2 teaspoon taco seasoning
  • Pinch cayenne
  • Ground black pepper (to taste)

Instructions

  1. In a medium bowl, combine shrimp with taco seasoning, garlic powder, and pepper. Set aside.
  2. In a small bowl, whisk together yogurt, mayo, lime juice, remaining taco seasoning, cayenne, and pepper. Set aside.
  3. Preheat a non-stick skillet over high heat. Cook shrimp until pink on both sides; about 3-5 minutes total.
  4. In a large bowl, mix coleslaw with chopped cilantro, salt, and most of the sauce; reserve some sauce for drizzling.
  5. Warm each corn tortilla in a skillet for about 10 seconds per side.
  6. Assemble tacos with shrimp and slaw; drizzle reserved sauce on top.
